CHAK-HAO AMUBI KHEER

Chak-hao amubi kheer is a traditional dessert from the northeastern region of India, particularly from the state of Manipur. This sweet dish is made with black rice, also known as chak-hao in Manipuri language, which has a unique nutty flavor and a striking deep purple color. The amubi refers to the cream extracted from ripe jackfruit seeds, which is used to enhance the flavor and creaminess of the kheer.

Ingredients

  • 1/2 CUP CHAK-HAO AMUBI MANIPURI BLACK RICE
  • 2 CUPS MILK
  • 6 TBSP SUGAR
  • 1 TSP CARDAMOM POWDER

RECIPE 

  • SOAK THE RICE FOR 4 TO 6 HOURS IN WATER. DRAIN THE WATER FROM THE SOAKED RICE.
  • IN A HEAVY BOTTOMED VESSEL, BOIL THE MILK.
  • WHEN THE MILK STARTS TO BOIL,
  • TURN THE HEAT DOWN TO LOW. WHEN THE RICE IS COOKED, MIX WELL.
  • ADD THE SOAKED BLACK RICE AND COOK ON LOW HEAT.
  • TAKE THE BLACK RICE KHEER OFF THE HEAT.
  • ADD SUGAR AND CARDAMOM POWDER.
  • YOU CAN SERVE THE CHAK-HAO AMUBI KHEER
